I came home from work today feeling crummy with my first cold in a year and a half and wanted something comforting for dinner. I had some fresh mint left over from Friday’s salad, so I decided to recreate a dish I had many years ago at Cafe Algiers in Cambridge (does anybody know if it’s still open?). I set some brown rice to simmering, then sauteed some garlic in olive oil and cooked up some nice little green French lentils in chicken broth. When the rice and lentils were done, I spooned equal portions into a bowl, sprinkled sea salt on top, then garnished it with a handful of minced mint and a few big spoonfuls of Greek yogurt. Perfect, and there’s plenty left over for lunch tomorrow.
